- 8 ounces spaghetti
- 1/2 cup extra virgin olive oil
- 6–8 cloves garlic, thinly sliced
- 1/2 teaspoon red pepper flakes, or to taste
- 1/4 cup fresh parsley, chopped
- Grated Parmesan cheese, for serving (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
- While the pasta cooks, heat the olive oil in a large skillet over medium-low heat. Add the garlic and red pepper flakes (if using). Cook, stirring frequently, until the garlic is fragrant and lightly golden, about 3-5 minutes. Be careful not to burn the garlic.
- Add about 1/2 cup of the reserved pasta water to the skillet. Increase the heat to medium and bring to a simmer, creating a light emulsion with the oil.
- Add the drained spaghetti to the skillet. Toss well to coat the pasta with the garlic-infused oil and pasta water. Add more pasta water if needed to create a saucy consistency.
- Remove from heat and stir in the chopped parsley. Serve immediately, topped with grated Parmesan cheese, if desired.
