Powerful Carbonara Pasta Sauce: Master It in 5 Steps

Description

Carbonara Pasta Sauce is a classic Italian dish that combines creamy and rich flavors with simplicity. This sauce is traditionally made with eggs, cheese, and pancetta, creating a luscious texture without the need for cream. It’s a comforting and authentic recipe that’s perfect for turning any meal into an Italian feast.

Ingredients

  • 200 g pancetta, chopped
  • 400 g spaghetti
  • 2 large eggs
  • 50 g Pecorino Romano cheese, grated
  • 50 g Parmesan cheese, grated
  • 4 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste

Instructions

  1. Cook the spaghetti in a large pot of salted boiling water until al dente, then drain.
  2. In a large pan, heat olive oil over medium heat. Add the pancetta and cook until crispy.
  3. Add garlic to the pancetta and sauté for 1 minute, then remove the pan from heat.
  4. In a bowl, whisk together eggs, Pecorino Romano, Parmesan, and pepper.
  5. Add the hot spaghetti to the pancetta, pour over the egg mixture, and toss quickly to combine, ensuring the heat of the pasta cooks the eggs.

Notes

  • Ensure the pasta is hot to cook the eggs and form a creamy sauce.
  • For a vegetarian version, omit the pancetta and add sautéed mushrooms.
  • Serve immediately for the best texture and flavor.
