Ingredients
- 400 g spaghetti
- 150 g pancetta, diced
- 4 eggs
- 100 g parmesan cheese, grated
- 2 cloves garlic, minced
- Salt, to taste
- Freshly cracked black pepper, to taste
Instructions
- Cook the spaghetti in a large pot of boiling salted water until al dente. Reserve 1 cup of the pasta water, then drain.
- In a large pan, cook the pancetta over medium heat until crispy. Add the minced garlic and sauté for about 1 minute.
- In a bowl, beat the eggs and mix in the grated parmesan cheese. Season with salt and plenty of black pepper.
- Remove the pan from heat and add the cooked pasta to the pancetta. Pour the egg mixture over the pasta, stirring quickly to create a creamy sauce. Add reserved pasta water as needed to achieve the desired consistency.
- Serve immediately, garnished with more parmesan and black pepper if desired.
