Ingredients
- 200 g pancetta, diced
- 2 large eggs
- 50 g grated Parmigiano-Reggiano
- 50 g grated Pecorino Romano
- 400 g spaghetti or pasta of choice
- 2 cloves garlic, minced
- Salt and black pepper to taste
- 1 tablespoon olive oil
- Parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente.
- In a pan over medium heat, add olive oil and cook the pancetta until crisp. Add garlic and cook for an additional minute.
- In a separate bowl, whisk eggs with both cheeses, and season with salt and pepper.
- Drain the pasta, reserving a cup of pasta water, and add pasta to the pancetta.
- Remove the pan from heat, then quickly pour the egg and cheese mixture over the pasta, stirring vigorously until creamy.
- Add pasta water incrementally to reach desired sauce consistency.
- Serve immediately, garnished with chopped parsley.
