Description

This creamy Carbonara pasta sauce is a delightful and authentic take on the classic Italian favorite. Rich with the flavors of cheese and pancetta, it brings comfort and a touch of elegance to any meal. Perfect for a quick family dinner, it captures the essence of traditional Italian cooking.

Ingredients

  • 200 g pancetta, diced
  • 2 large eggs
  • 50 g grated Parmigiano-Reggiano
  • 50 g grated Pecorino Romano
  • 400 g spaghetti or pasta of choice
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • Parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente.
  2. In a pan over medium heat, add olive oil and cook the pancetta until crisp. Add garlic and cook for an additional minute.
  3. In a separate bowl, whisk eggs with both cheeses, and season with salt and pepper.
  4. Drain the pasta, reserving a cup of pasta water, and add pasta to the pancetta.
  5. Remove the pan from heat, then quickly pour the egg and cheese mixture over the pasta, stirring vigorously until creamy.
  6. Add pasta water incrementally to reach desired sauce consistency.
