One-Pot Casarecce Pasta recipe: One-Pot Cas

Description

This creamy One-Pot Casarecce Pasta recipe delivers a deliciously satisfying meal with minimal cleanup. All ingredients cook together in a single pot, making it ideal for busy evenings when you crave comfort food without the fuss. The pasta cooks directly in the sauce, allowing flavors to meld beautifully and creating a naturally thickened, rich dish. This easy method makes a perfect weeknight dinner that feels special.

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 400 g (about 14 oz) casarecce pasta
  • 700 ml (about 3 cups) vegetable or chicken broth
  • 400 g (about 14 oz) crushed tomatoes
  • 120 ml (about 1/2 cup) heavy cream
  • 60 g (about 1/2 cup) grated Parmesan cheese, plus more for serving
  • Salt and freshly ground black pepper to taste
  • Fresh basil or parsley, chopped, for garnish

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the finely diced onion and cook, stirring occasionally, until softened and translucent, about 3-5 minutes.
  2. Add the minced garlic to the pot and cook for another minute until fragrant, being careful not to burn it.
  3. Stir in the casarecce pasta, broth, and crushed tomatoes. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to medium-low, cover the pot, and simmer for 12-15 minutes, or until the pasta is al dente. Stir occasionally to prevent the pasta from sticking to the bottom and ensure even cooking.
  5. Remove the pot from the heat. Stir in the heavy cream and grated Parmesan cheese until well combined and the sauce is creamy.
  6. Season with salt and freshly ground black pepper to taste. If the sauce is too thick, add a splash more broth or water until it reaches your desired consistency.
  7. Serve immediately, garnished with fresh basil or parsley and extra Parmesan cheese, if desired.

Notes

  • For a richer flavor, you can sauté some pancetta or bacon before adding the onion.
  • Feel free to add your favorite vegetables like spinach (stir in during the last 2 minutes) or chopped bell peppers (sauté with the onion).

  • If you prefer a spicier kick, add a pinch of red pepper flakes with the garlic.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop with a splash of broth or water to loosen the sauce.
