Ingredients
- 1 tbsp olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 400 g (about 14 oz) casarecce pasta
- 700 ml (about 3 cups) vegetable or chicken broth
- 400 g (about 14 oz) crushed tomatoes
- 120 ml (about 1/2 cup) heavy cream
- 60 g (about 1/2 cup) grated Parmesan cheese, plus more for serving
- Salt and freshly ground black pepper to taste
- Fresh basil or parsley, chopped, for garnish
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the finely diced onion and cook, stirring occasionally, until softened and translucent, about 3-5 minutes.
- Add the minced garlic to the pot and cook for another minute until fragrant, being careful not to burn it.
- Stir in the casarecce pasta, broth, and crushed tomatoes. Bring the mixture to a boil.
- Once boiling, reduce the heat to medium-low, cover the pot, and simmer for 12-15 minutes, or until the pasta is al dente. Stir occasionally to prevent the pasta from sticking to the bottom and ensure even cooking.
- Remove the pot from the heat. Stir in the heavy cream and grated Parmesan cheese until well combined and the sauce is creamy.
- Season with salt and freshly ground black pepper to taste. If the sauce is too thick, add a splash more broth or water until it reaches your desired consistency.
- Serve immediately, garnished with fresh basil or parsley and extra Parmesan cheese, if desired.
Notes
- For a richer flavor, you can sauté some pancetta or bacon before adding the onion.
- Feel free to add your favorite vegetables like spinach (stir in during the last 2 minutes) or chopped bell peppers (sauté with the onion).
