One Pot Lemon Pepper Chicken with Orzo Recipe

Ingredients

  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup dry orzo pasta
  • 4 cups low-sodium chicken broth
  • 1 large lemon, zest and juice
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/2 medium onion, finely chopped
  • 1 teaspoon black pepper, freshly ground
  • 1/2 teaspoon salt, or to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Season with salt and pepper. Remove chicken from the pot and set aside.
  2. Add the chopped onion to the pot and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant..
  3. Pour in the chicken broth, lemon juice, and lemon zest. Bring to a boil, scraping up any browned bits from the bottom of the pot.
  4. Stir in the orzo pasta. Return the chicken to the pot. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the orzo is cooked through and the chicken is cooked through.
  5. Remove from heat and let stand for a few minutes to allow the sauce to thicken slightly.
  6. Garnish with fresh parsley and serve immediately.
